Manic Monday Meals

Seafood Crumble

Serves 4 people Approximate Time: 45 mins.
Ingredients:  

1 tbsp. olive oil
400g (approx.) jar ready-made sauce
225g (8oz) cod fillet
110g (4oz) plain flour
75g (3oz) oats

1 onion, chopped
450g (1lb) seafood cocktail, defrosted and drained
2 tbsps. fresh dill or chives
75g (3oz) butter
3 tbsps. fresh parsley

Method:

  1. Pre-heat oven to 200°C (400°F) or Gas Mark 6.
  2. Heat the olive oil in a pan and fry the onion for 2-3 mins. until softened.
  3. Stir in the sauce and heat gently until just about to boil. Season to taste then, off the heat, add the fish and dill.
  4. Spoon into an ovenproof dish. Meanwhile in a bowl rub the butter into the flour until it resembles coarse breadcrumbs. Stir in oats and parsley. Season well then sprinkle over the fish filling.
  5. Bake in the oven for 25-30 mins. until the crumble is golden.

Chocolate Mousse

Serves 2 people Approximate Time: 20 mins. and allow to chill
Ingredients:  

110g (4oz) Bourneville (or other plain) chocolate
3 tblsps. sherry

3 eggs
whipped cream or chocolate to decorate

Method:

  1. Grate chocolate and put into a bowl over a pan of hot water to melt.
  2. Separate eggs, egg yolks in one bowl and egg whites in another. Beat egg yolks and stir into melted chocolate for several mins., then remove from heat and stir in sherry.
  3. Whisk egg whites until stiff and fold into mixture.
  4. Pour immediately into glasses and leave to cool.
  5. Serve cold, decorate with cream and melted or grated chocolate.
